Potato Cake with Chili and Thai Sweet Basil
Ingredients
Serves 2
4 small or 3 medium potatoes
3/4 cup finely sliced spring onion
2/3 cloves garlic minced
1 heaped teaspoon chili flakes or 1 fresh chili finely chopped
1 cup roughly chopped Thai sweet basil
Oil to cook with
Directions
Wash but don’t peel potatoes, precook until they’re just soft
Cool potatoes and then grate into a large bowl
Combine everything except the garlic
Fry garlic in a large fry pan and then pour the potato mixture into pan.
Pat down until it’s in a large patty and then fry until golden brown.
Turn over in one piece if possible, otherwise break up into small patties and turn to brown other side.
Season with freshly ground pepper and sea salt.
